Tasting Notes
We sourced the finest malt in the country from Voyager Craft Malt. This malt provides a pure and smooth malt profile. Carefully fermented to provide a clean but rich base for the start of the distillation process. We then double distill our whisky wash through a unique distillation setup using a combination of our 1500L kettle and 300L copper pot still. This process puts our new make in a great position for the magic of time to do its thing. The new make whisky is then placed in a locally sourced, 300L French oak ex-shiraz barrel for a two year rest. At this point the whisky was tasting great but we really wanted to go the extra mile with our first release, so we decanted into a 100L resized French oak ex-shiraz barrel with a heavy char to sit for a few more months to really make it shine.
